2016 Trevor Jones Sauvignon Blanc

  • This wine is made from fruit sourced from the Adelaide Hills. Dale and Kate Tuck's Mount Crawford vineyard is situated at 550 metres bordering the Southern end of Eden Valley, the vineyard is on the South Western slope of The Mount Lofty Ranges.


    I have deliberately avoided the commonly accepted  style of wine displaying overt grassy and floral notes associated with the variety, typically sourced from New Zealand.


    To minimize skin contact post crush and subsequent grassy phenolics, I whole cluster press the hand selected chilled fruit and reduce the phenolics (tannins) by limiting the yield to around 550 litres per tonne maximum. The pressings (taille) are reserved for a full bodied dry white blend. Cold settling the juice for 5 to 10 days preceding a relatively long cold fermentation adds a further flavour dimension. The wine is aged on lees for 3 months prior to bottling and subsequent bottle aging.


    The Trevor Jones Sauvignon Blanc displays subtle stone fruit characters and gooseberry fruit, the relatively understated fruit flavours will bottle age beautifully to add a further flavour dimension. This style is reminiscent of the Sancerre wines with a crisp natural acidity and delightful clean finish.
