2015 Trevor Jones Grigio Blanco
I made my first Pinot Grigio in 2005. As I gained experience with the variety I chose to follow a more full bodied style of wine. The fruit is sourced from the Adelaide Hills near Mount Torrens at around 450 metres. Vineyard soil is loam over clay with good water retention qualities suiting white varietals. The fruit is machine harvested at night, crushed and skin contacted for 12 hours prior to pressing. The pressings are fined and returned to the cuvée prior to cold settling and controlled cold fermentation. The juice is co-fermented with 12% Sauvignon Blanc taille from Mount Crawford to add further aromatics and flavour dimension.
The Trevor Jones Grigio Blanco displays ripe pear and stone fruit characters underpinned by balanced acidity. As a full bodied style this wine is textural and mouth-filling suiting a wide range of foods. As it bottle ages it is becoming rounder and opulent taking on an oilier texture, tropical aromas and flavours.
